Simple Kale Salad

This is one of my favorite dishes to prepare because its fast, super heathy and very filling.  This meal usually fills me up so much that I have a hard time eating dinner.

I hope this meal brings you as much joy as it does for me.

INGREDIENTS

Lacinato kale (Tuscan kale) Lemon Olive oil Salt and pepper

INSTRUCTIONS

Remove the rib from the kale and chiffonade. Add 2 table spoons of olive oil, the juice of 1/2 lemon salt and pepper to taste and this part is where you get the waxy leaf tender.

You massage the kale with a rubber glove on. You will see the kale become darker green and more tender.
