INSTRUCTIONS

Preheat oven to 425. Wash, pierce and bake sweet potatoes for 2 1/2 hours, or until fork tender.

After you bake your sweet potatoes at 4:25 for 2 1/2 hours scoop out 3 to 4 cups of sweet potato and add to a mixing bowel.

Add one cup of white sugar to eggs 1 tablespoon of good vanilla, 1 teaspoon of ground cinnamon 1/4 teaspoon of ground nutmeg and 1/4 cup of heavy whipping cream get a good mixer and mix this together till it is smooth and not lumpy.

In a greased glass, 9 x 13 casserole dish, pour  in this mixture. And a side mixing bowl mix together the melted butter, the 1 cup of brown sugar 1/3 cup of flour and 1 cup of chopped pecans.
