Shrimp Stir-fry Recipe

When it comes to week night meals, I try to keep it healthy and fast – which is not always as easy as it sounds. I’m vegan/pescatarian so there’s a slight edge to my searching.

I want to share this super easy, 15 minute meal with you that I know you will love.

INGREDIENTS

Teriyaki Veggies and Sauce Stir-fry kit White shrimp Brown rice

INSTRUCTIONS

Heat a medium-sized skillet on medium heat. Once hot, add one tablespoon of olive oil, shrimp, salt and pepper to taste.

Cook shrimp for about 2 minutes on each side. Remove the shrimp from the skillet and set aside. Add the package of stir-fry to that skillet and cook on med heat. Stirring occasionally.

When the veggies look to be cooked through, add the 1/2 cup cooked brown rice and mix with the veggies until everything is combined.

Add the teriyaki packet that comes in the bag of stir-fry veggies. Add the cooked shrimp back into the pan, mix well and serve.
