We are officially in the fall season and I could not be more thrilled. We had a very dry and very hot summer, so I am super excited for fall this year. In the summer months, we usually eat light, lots of salads, and lots of proteins on the pit outside.
So now that we are officially fall I brushed off my crockpot, to kick off the season I made my famous “ Mississippi pot roast”. It always seems to be a family favorite. I normally double the recipe for a leftover roast to enjoy on those busy weeknights, and It’s probably one of the easiest slow cooker recipes.
I promise your family will love this delicious dinner. With a few simple ingredients such as ranch seasoning, a stick of butter, pepperoncini juice, and you have the best roast for your family. This slow cooker Mississippi pot roast recipe will be fork tender, juicy and oh, so delicious.
Just a side note you can purchase crockpot bags to line your crockpot but it is not necessary.
What Is The Best Roast To Use?
I like to use a beef chuck roast, as the fat makes the roast a more tender meat to me. However, you can also use a rump roast with less fat. They both cook the same and will both have amazing flavor. You could also use a pork roast for this recipe if you’d like.
Making Your Crock Pot Mississippi Pot Roast
Ingredients:
- 1 (3-4 pound) beef roast
- 1 packet of ranch mix
- 1 packet of au jus mix.
- 1/2 stick of unsalted butter
- 4 Pepperoncini peppers & about 1/4 cup of the juice
Making Your Roast Beef Recipe
- Place roast in the crockpot, and add the ranch dressing and the packet of aus jus gravy mix.
- Slice the butter and add that on top of the roast in the seasoning, then add the four peppers.
- Pour the pepper juice off to the side, cover the crockpot, and cook for eight hours on medium or six hours on high. Three hours into this cooking process your house is gonna smell glorious!
- Try not to lift the lid of the crockpot as the steam is what makes the roast tender and you don’t want to release any of that steam. In the seventh hour, you can add any vegetable that you would like, little tiny russet potatoes or baby carrots, etc.
- Cover back the crockpot and cook for that additional hour.
Some people eat this with noodles or mashed potatoes for loads of delicious flavor, However, I’m a southern Cajun girl so I love this roast with long-grain rice. If you are watching your carbs, you can use cauliflower rice, or mashed cauliflower for a lot of flavor, too. Personally, I always get French bread for the site for dipping in the gravy. That’s the best part, and you’ll thank me later.
I hope you enjoy this easy Mississippi recipe as much as my family has it is been a tradition for me for over 40 years.
Pro Cooking Tips:
- For the best flavor, you will want to brown the roast first in a hot skillet This will sear the roast, and keep the juices in, while also helping to deepen the flavor of your brown gravy mix.
- You do not need to add any water or broth to this recipe. It will make enough liquids as it cooks.
- If you like lots of gravy, you can add a can of beef concentrate before you add your veggies.
