When it comes to week night meals, I try to keep it healthy and fast – which is not always as easy as it sounds. I’m vegan/pescatarian so there’s a slight edge to my searching. Scanning through the produce isles at the grocery store really sparks my imagination when it comes to selecting options for healthy, week night dinners. There are so many choices nowadays when it comes to produce. I’ll talk about all of those in future blog post. For now, I want to share this super easy, 15 minute meal with you that I know you will love.
I love Sprouts grocery store. I feel their produce holds a better quality and they make it easy to find particular organic products. I don’t buy everything organic, because it can be a bit pricey! I usually stick to purchasing only light skin fruits and veggies that have a thin skin. For example, I don’t really worry about avocados since they have a thicker skin.

This bag of stir-fry I purchased at Sprouts included all the cut veggies with the teriyaki seasoning included. In addition, I mixed 1 lb. of white shrimp and 1 cup of brown rice, and that’s it! So simple!
Here is the process of the meal:
Step 1: Heat a medium-sized skillet on medium heat. Once hot, add one tablespoon of olive oil, shrimp, salt and pepper to taste
Step 2: Cook shrimp for about 2 minutes on each side
Step 3: Remove the shrimp from the skillet and set aside
Step 4: Add the package of stir-fry to that skillet and cook on med heat. Stirring occasionally
Step 5: When the veggies look to be cooked through, add the 1/2 cup cooked brown rice and mix with the veggies until everything is combined
Step 6: Add the teriyaki packet that comes in the bag of stir-fry veggies. Add the cooked shrimp back into the pan, mix well and serve.
