If you’re anything like me, then salads always have a place on the dinner menu. I rarely buy salad dressings, because they are so easy to make! I have 2 salad dressings that are always on repeat.
The first one is a basic base for any homemade salad dressing but also is great without adding any herbs to it.
You will need:
- 1/4 cup of really good olive oil
- 1 teaspoon of Dijon mustard
- 1 teaspoon red wine vinegar
- 1 teaspoon fresh lemon juice
- A little salt & fresh black pepper
In a medium bowl, whisk this together until it emulsifies.
By adding in a few more simple ingredients, you can create the best Caesar dressing in no time at all.

Caesar Salad Dressing
- 3 olive oil-packed anchovies
- 1 large garlic clove
- 3/4 teaspoon of salt
- 1 large egg yolk
- 2 tablespoons fresh lemon juice
- 3/4 teaspoon Dijon mustard
- 1/4 cup vegetable oil plus 2 tablespoons
- 3 tablespoons parmesan cheese
Paste Mixture Ingredients:
- Mound salt
- Anchovies
- Garlic and a cutting board
Tilt your knife and drag it over the above mixture till it makes a paste. Set aside.
In a bowl, whisk together egg yolk, Dijon mustard, and lemon juice.
Add the above anchovy paste to the mustard mixture and whisk together. Slowly drizzle the vegetable oil into that mixture. Add parmesan cheese and mix. If the dressing is a little thick, you can add a tablespoon of water to loosen up the dressing.
